Quick & Easy Syn Free On Slimming World Tomato & Veg Soup Recipe
This is my absolute favorite ‘go to’ Slimming World Syn Free Soup recipe… BY FAR! Yes, I really do love it that much lol … It’s not just quick and easy, It’s also super healthy, syn free AND totally delish! It can also be easily adapted to make it a spicy version.
This is not just a recipe for people that are trying to lose weight, or on a ‘health kick’ … This is a soup recipe for people that love a bit of comfort food too. 🙂
1 red onion … Roughly chopped
Low calorie cooking spray (must be less than one calorie per spray)
1 vegetable stock cube
1 medium sized sweet potato … peeled and roughly chopped
2 Medium sized carrots… peeled and roughly chopped
2 Red peppers… De-seeded and roughly chopped
1 Tin of chopped tomatoes (400gs)
Salt & pepper to taste
Chopped Basil (For the top – Optional)
Using the low cal cooking spray, fry the onions in a pan until soft.
Use the veg stock cube and add water to make approximately 750mls.
Add the stock to the pan with the onions. Add the sweet potato, carrots, peppers and tomatoes.
Season with the salt and pepper.
Bring to the boil and then let it simmer with the lid on for 20 minutes.
When it’s cooked, let is cool a little before blending until it’s smooth.
Taste it and see if you want to add any more salt and pepper (I prefer it quite peppery)
Serve into bowls and sprinkle with chopped Basil.
Tip; If you want a spicy soup you could add some chopped chili or chili flakes.
Tip; You could also add a spoonful of fat free fromage frais to make it a little creamier.
